One of my readers recently shared with me memories of her mother baking cookies on a griddle on the stove. What an awesome idea to save energy on a hot summer day, when your family members are looking for freshly-baked cookies, but you don’t want to pollute the house with the heat of the oven.

You just need to make the dough, cut the cookies and put a layer between the pieces of wax paper. Now store them in the freezer and then take out the amount you need for making cookies. Let them defrost for about 20 minutes, then place them on the hot griddle. You will have a small amount of cookies in no time!

You can also use an electric griddle and get the exact same results. This method makes these griddle cookies so easy and delicious! It would be very easy to take a frying pan or an electric griddle or skillet with you when you go camping or for an outdoor activity as long as electricity is available. Make your dough at home or freeze it in advance and take it to your destination.

I have made some changes to the recipe from the one I found in a cookbook. When I made the cookies, I replaced the sugar with Splenda. They tasted good, but I left the sugar in the recipe below for you to decide what kind of sweetener you want to use. As indicated below, I used cinnamon instead of the nutmeg that was recommended in the original recipe. I like the blend of raisins and cinnamon together, which create a different flavor. Make them the way your family likes them best. That’s what good cooks do. After all, you are cooking for your family or guests, so you will have to keep in mind the kind of cookies they would enjoy.

Preparation time: 25 minutes Cooking time: 45 min. The cookies will be ready in : 1 hour and 10 minutes : Depends on the size of the cookies, though.

Ingredients

3 1/2 cups all-purpose flour, sifted

1 cup of sugar

1 1/2 teaspoons baking powder

1 teaspoon of salt

1/2 teaspoon baking soda

1 teaspoon cinnamon

1 cup of butter

1 egg

1/2 cup of milk

1 1/4 cups raisins

Instructions

In a large bowl, sift the dry ingredients.

Cut the butter. (any brand will do).

In another bowl, beat the eggs well. Add milk and mix.

Add the egg mixture to the flour. Mix well.

Add raisins and stir until dough is firm.

Roll out the dough on a lightly floured surface to a thickness of one-quarter inch. Cut with a round cookie cutter if you have one or use a small glass upside down.

Lightly grease the griddle (either kitchen or electric). Heat it until a few drops of water sizzle on it. You may have to experiment with the right temperature, but remember that it is better for the iron not to be hot enough than to overheat and burn your cookies.

Place the cookies on the griddle. As the bottom of the cookies browns, the top swells. Then, turn the cookies over and brown the top.

Cool them down on a wire rack.

Ideas for Additions and Experiments

Add nuts to make it different

I tried this recipe again and this time I added nuts. The nuts made them even more delicious. Be careful when adding nuts to a recipe as many people are allergic to them. If you are serving your own family, you should be aware of the problems. However, if you’re making cookies to share at a party, it’s probably best to leave them out of the recipe.

Substitute golden raisins for regular raisins.

I also substituted golden raisins and the taste was the same for me. However, I liked the look of the regular raisin cookies better than the golden raisin cookies and they were cheaper in my grocery store.

Try this method with other cookie recipes

I don’t know why this cooking method wouldn’t work on a variety of cookies. I like the idea of using all the dough prepared in your refrigerator so that you can use it whenever you need. I plan to try a package of chocolate chip cookie dough soon!
